The Vintage
The beginning of the 2007 growing season was warm, with average temperatures throughout the rest of the season. Limited rainfall from the start of the season led to smaller canopy growth and early fruit exposure. Sugar and maturity developed quickly in warmer sites, with the first grapes being harvested at the end of August. Cooler than normal temperatures toward the end of September allowed for a slowing of sugar accumulation in cooler sites and promoted flavor progression.
Winemaking
The blend was anchored with fruit sourced from the Horse Heaven Hills AVA and rounded out with grapes from the Wahluke Slope, Yakima Valley and Rattle Snake Hills. Whole clusters were fed into membrane presses, where the juice was separated from stems and seeds. After pressing, the juice cold settled for 1-2 days. The juice was inoculated with yeasts to initiate the 20-30 day fermentations. Cool temperatures throughout the winemaking process accentuated the naturally clean, fruity character and crisp acidity.
